Chicken, Mushrooms,
and Chez Whiz Casserole
From my son Dave — September 1991

2 cups Minute Rice
2 pkgs frozen chopped broccoli
2 16-oz jars Chez Whiz
2 cans creme of mushroom soup
2 10-oz cans undrained chunk white meat
chicken
1 8-oz can drained mushrooms
1 tsp chopped jalapeno peppers
In a large saucepan, heat 3-1/2 cups of water and one teaspoon of salt to boiling. Remove from heat, add rice,
stir, cover and set aside.
In a very large bowl, microwave broccoli just until it's defrosted and breaks
apart easily. Drain well. Add Chez Whiz, soup, chicken, mushrooms and jalapenos.
Stir the rice in the saucepan to make sure the water has been absorbed, then add
it to the bowl. Mix well. Pour it into a 10x15
baking dish sprayed with Pam, and bake uncovered at 350 degrees for 45 minutes, or until
the center bubbles and the edges are lightly browned.
Note: If you don’t have a 10x15 baking dish, you can use a 9x13 baking dish and fill the dish almost
to the top as it doesn’t bubble over when baking. Then you’ll need another very small baking dish
for the remaining mixture.
This recipe is always a hit at my cul-de-sac parties, and it can be made well
ahead of time and refrigerated, then baked when you're ready.
